The Best Artichoke Bruschetta Bites- Super Easy!

These delicious artichoke bruschetta bites are a perfect appetizer to bring to any occasion! They are incredibly easy to make, requiring only 7 ingredients. From the crisp baguette slice, to the creamy & flavorful topping, you will be sure to make them again. They are ideal for a crowd, but make sure you grab one before they’re gone…they won’t last long! Is your mouth watering yet? Mine is… I know what I’m having with dinner tonight!

When my husband and I were dating, I came back home with him to meet his family. One thing I love about the Midwest is that there is always a potluck to bring food to. So, wanting to impress his family, I looked up “delicious appetizers” on Pinterest and stumbled across artichoke bruschetta. I adjusted the recipe a bit, and hoped for the best. Since then, I have made these for just about every family get-together or special occasion. They are THAT good!

Ingredients Needed:

  • Baguette or Italian loaf- depending on how big or small you want the slices.
  • Cream cheese
  • Mayonnaise– click here for my homemade mayonnaise recipe!
  • Artichoke hearts
  • Italian blend cheese
  • Parmesan cheese
  • Garlic salt

Why Use Homemade Mayonnaise?

There are a couple of different reasons why I prefer to make homemade mayonnaise. One of them is the price! Making mayonnaise at home is so much cheaper than buying it at the store, especially if you use it a lot. You will most likely always have the ingredients on hand anyways.

The second reason I prefer mayonnaise to be homemade is the flavor! If you use organic olive oil from a glass bottle, the flavor is amazing! You can taste the fruity flavor of the olives in each bite.

How To Make Artichoke Bruschetta Bites

Step 1: Preheat the oven to Broil.

Step 2: Slice your choice of bread into 3/4 -1 inch slices, and place on a baking sheet. Don’t throw out the heel of the baguette, they will come in handy when you want to taste test!

Step 3: Add softened cream cheese, mayonnaise, chopped artichoke hearts, 1 cup cheese, and garlic salt into a mixing bowl. If you want them extra cheesy, you can add more cheese!

Step 4: With your handheld mixer, mix all of the ingredients on a low speed until well combined. P.S. it’s ok if there are small clumps of cream cheese, it will be delicious when you bite into it! After you have mixed the ingredients together, grab those heels of the baguette and do some taste testing!

Step 5: Place a heaping spoonful of the mixture onto each baguette slice, making sure to spread evenly onto the slice. Top each slice with grated Parmesan cheese or Italian blend cheese.

Step 6: Place the bruschetta bites into the oven for 5-7 minutes, checking periodically. Once the tops are a light golden brown, remove from the oven and serve immediately!

  • 2 tsp garlic salt Start with 1 tsp, taste test and adjust as needed!

Notes

  • Make sure to check often once placed in the oven, as they can easily burn on Broil. 
  • When adding the garlic salt, add 1 tsp to start. Do a taste test and adjust as needed.
