The Best Artichoke Bruschetta Bites

These delicious artichoke bruschetta bites are a perfect appetizer to bring to any occasion! They are incredibly easy to make, requiring only 7 ingredients. From the crisp baguette slice, to the creamy & flavorful topping, you will be sure to make them again.

Ingredients

  • 1 Baguette or Italian loaf
  • 1 8oz block of cream cheese
  • 1 cup mayonnaise
  • 1 can artichoke hearts chopped
  • 1 cup Italian blend cheese more if using for topping
  • 1/2 cup Parmesan cheese
  • 2 tsp garlic salt Start with 1 tsp, taste test and adjust as needed!

Instructions

  • Preheat the oven to Broil
  • Slice your choice of bread into 3/4 -1 inch slices, and place on a baking sheet. Don't throw out the heel of the baguette, they will come in handy when you want to taste test!
  • Combine cream cheese, mayonnaise, cheese, artichoke hearts, and garlic salt into a mixing bowl.
  • With your handheld mixer, mix all of the ingredients on a low speed until well combined. P.S. it's ok if there are small clumps of cream cheese, it will be delicious when you bite into it! After you have mixed the ingredients together, grab those heels of the baguette and do some taste testing!
  • Place a heaping spoonful of the mixture onto each baguette slice, making sure to spread evenly onto the slice. Top each slice with Parmesan cheese or Italian blend cheese.
  • Place the bruschetta bites into the oven for 5-7 minutes, checking periodically. Once the tops are a light golden brown, remove from the oven and serve immediately!

Notes

  • Make sure to check often once placed in the oven, as they can easily burn on Broil. 
  • When adding the garlic salt, add 1 tsp to start. Do a taste test and adjust as needed.
