Did you run out of mayonnaise, but don’t have time to go to the store? This recipe is perfect for when you need mayonnaise in a pinch! You will have perfect homemade mayonnaise with just 6 ingredients and 3 simple steps!

I can’t count how many times I have made this recipe, but it is so delicious each time I make it! I used to buy mayonnaise from the store, but I didn’t want to pay $6 or more for a small jar, especially with how much I use it! After doing some research, I figured out that making it at home was cheap and easy to do! I tried several recipes and failed a few times, but finally found the perfect recipe. There aren’t exact measurements, just measure with your heart!
Why Should You Make Mayonnaise From Scratch?
When you make mayonnaise at home, you can ensure that only quality ingredients are used- no preservatives or unnecessary ingredients. Making mayonnaise at home consists of 6 simple ingredients: An egg, Dijon mustard, salt, lemon juice, vinegar, and olive oil. In just ten minutes, you’ll have flavorful mayonnaise!
When I use homemade mayonnaise in a recipe, it truly enhances the flavor! With each bite, I can taste the simple ingredients that went into making it. I love making mayonnaise from scratch, and I know you will too!
Equipment Needed:
- Immersion Blender
- If you don’t have one, it is well worth it!
- Measuring spoons
- Egg Scrubber
Ingredients:
- 1 egg
- 2 tsp Dijon mustard
- 1 tsp salt
- 1 tsp distilled white vinegar
- 1 tsp lemon juice
- About 1 cup of olive oil
How To Make Mayonnaise From Scratch:
Step 1: Start by setting one egg on the counter until it is at room temperature. This will help the consistency of the mayonnaise.

Step 2: Once your egg is at room temperature, crack it into a mixing bowl. Using your immersion blender, froth the egg for 10-15 seconds. Add the Dijon mustard, salt, lemon juice, and vinegar, and mix with the immersion blender.

Step 3: Slowly add the olive oil, 1 TB at a time. Trust me on this one…I have had liquid mayonnaise from adding the olive oil all at once. After adding the olive oil, the mayonnaise may still be a little runny. When placed in the refrigerator, it will thicken up.

After adding the olive oil, you should have a delicious bowl of mayonnaise! Enjoy right away, or place in the fridge, and enjoy within a week.


How To Make Mayonnaise in 3 Steps!
Ingredients
- 1 egg
- 2 tsp Dijon mustard
- 1 tsp salt
- 1 tsp distilled white vinegar
- 1 tsp lemon juice
- About 1 cup of olive oil
Instructions
- Start by setting one egg on the counter until it is at room temperature. This will help with the consistency of the mayonnaise.
- Once the egg is at room temperature, crack it into a mixing bowl. Using the immersion blender, froth the egg for 10-15 seconds. Add the Dijon mustard, salt, lemon juice, and vinegar, and mix with the immersion blender.
- Slowly add the olive oil 1 TB at a time. (Trust me on this one…I have had liquid mayonnaise from adding the olive oil all at once.) Add 1 TB of olive oil at a time, while continuously blending with your immersion blender. You should slowly start to see the color and consistency change. *It may not be as thick as normal mayonnaise from the store, but it will thicken a little but once placed in the fridge.
- Enjoy! Store in the refrigerator for up to one week!
Notes
- Do not add all of the olive oil at once. I have tried and failed many times. The best method is to do 1 TB at a time.
- A room temperature egg is key! It also helps to have your other cold ingredients at room temperature, if you can.
